I think that a summer isn´t perfect without this filling fresh milky veggie soup. You can use everything you can find growing seasonally in your garden as most of the fresh vegetable-herb combinations taste great in that dish. Another great thing is that you can eat the soup cold or warm. It´s up to you. And it usually tastes even more delicious on the next day.

Buckwheat with smoked tofu and fresh beans
Raw buckwheat can be tricky to work with as it becomes gluey quite quickly if boiled for too long or in too much water but if you follow this recipe it´s hard to fail. Crunchy smoked tofu and buckwheat are one of the best combinations in my opinion and the cool thing is that it can be eaten either warm or cold as a salad.
Chicken soup without chicken
I realized that I have walked past this bright coloured huge mushroom 100 times without knowing it´s edible. Chicken-of-the-woods (Laetiporus sulphureus) grows everywhere, mostly on old or almost dead oak, aspen or white willow trees in spring and summertime.
Gluten free buckwheat with smoked tofu
Buckwheat is one of the staple foods of Estonia and other Eastern countries. I used to hate it when I was a kid as it was often cooked as porridge in huge amounts at once and therefore needed to be eaten for all courses of the day. Now I can´t imagine my life without those glutem free tiny nutritious nuts as they are botanically called. If I get cravings for buckwheat in other countries I go to health food stores or Russian and Polish supermarkets.
