Granny´s coconut-kefir pancakes

As far as I remember from my childhood those fatty goldenbrown ‘Granny style'(read: very fatty) spoon-pancakes(lusikapannkoogid) have always been food that was made when there wasn´t much else to eat in the house but some flour in the corner of the cupboard and a bit of fermented milk. Not to mention that there was always some homemade jam there. Raspberry, strawberry and black currant flavours go really well with those spoon-pancakes.

Energy balls with weeds and seeds

I make similar healthy snacks with variating ingredients every now and then to take with me if I know that I might be stuck doing physical work like gardening or building or hiking for a whole day. Quite often the time flies and I do skip meals and remember food when I´m already super hungry.

Meadowsweet-blueberry ice cream

Sweet meadowsweet blossoms don´t only attract pollinators but the one´s who have sweet tooth too. I´ve used those sweet blossoms in various desserts and bakes to reduce the amount of sugar and give them an interesting flowery flavour.

Sugared mallow blossoms

Common mallow(Malva sylvesteris)

It´s easy to make sugared petals but it adds a lot of colour and some extra floral vibes to your bakes. I used mallow flowers because that´s what blossomed near me at that time. You can aslo use other flowers:

  • Rosehip or rose(Rosa)
  • Johnny Jump up heartsease(Viola tricolor)
  • Daylili(Hemerocallis)
  • Pumpkin blossoms (Cucurbita pepo)
  • Garden phlox(Phlox paniculata)
  • Lemon-scented geranium(Pelargonium crispum),
  • Rose Geranium(Pelargonium graveolens)
  • Peppermint-scented geranium(Pelargonium Tomentosum)
